Bread Making: An Introduction |

Locally produced organic flours and fresh yeast will be used to make a variety of breads: white loaf, foccaccia, multigrain seedy and naan. This course is intended for inexperienced bread makers. The tutor, Sue, is widely experienced in teaching bread making in a relaxed and informal manner. Everything except an apron and a bag to take your bread home in is provided.

Stuart Oetzmann trained as a pastry chef in London working for various people including the Roux brothers, Sally Clarke and Anthony Worrall Thompson before returning home to Norfolk and establishing the Metfield Bakery. During this advanced workshop Stuart will show you how we make traditional Metfield breads using the old fashioned techniques of long fermentation and sponge methods. We’ll wrap up the evening with dinner in the Metfield Cafe.
